And appreciate you mentioning the changes you made - I can see both working (though personally I would rather not have the extra oil in the dough when the cheese already oozes into the dough a bit but I can see the reasoning).

Very nice and easy recipe, my khachapuri came out perfect, very close to those I used to have in Georgia! The only thing I added to the dough (because I remember seeing the dough being made like this) was 1/4 cup vegetable oil, helps make the dough more smooth. And for the filling I find a combination of feta and grated Halloumi cheese to be closer to Sulguni, so I reduced the feta to 1/3 cup and added 125g of grated Halloumi cheese instead, alongside the mozzarella of course. But definitely saving this recipe!! 😊

This is a great recipe, the dough is easy to make and handle, and the taste of the mixture of feta/mozarella is pretty authentic if Sakartvelian cheeses are not available. I would suggest to use mozzarella scamorza as it is drier and melts even better.
